I am excited. For two reasons: 1) I get to sleep in a hotel and go to bed early, 2) my first speaking engagement about diabetes. So not only will I be well rested from two nights at a hotel without a snoring husband or teething babe, but I will be telling others my stories and struggles with Type I diabetes. I also have an evening session, demonstrating how to take a fifty pound piece of beef and turn that lump into delicious steaks, roasts, and boneless country ribs. All I need is finesse, a well sharpened knife, and a refresher in muscle anatomy. I’ve been studying the animated cutting videos online with an animated female cutter in a perfectly white shirt wearing perfectly perky bra and perfectly removing one steak after another. No problem!
I am ready for my first diabetes (and these meat cuts) engagements. And two nights of lovely, undisturbed sleep.
